Chocolate Brownie Cake

In a quest to bake a healthy cake for my recent house warming party, I came up with the following recipe. It's dense like a brownie and immensely chocolatey! It's high energy, but there is nothing refined in it, plus it's nut, milk and gluten free. You and your fellow chocolate lovers will devour it with mucho gusto!


  • 1 cup 100% organic cacao powder
  • 1 cup organic coconut flour*
  • 2/3 cup coconut oil
  • 1 cup honey
  • 2 bananas
  • 8 whole eggs
  • 1 cup chocolate chips OR broken pieces of 70%+ cacao bar

* you can make this yourself by pulverising coconut chips in a blender or grinder.



Preheat the oven to 180C/350F. Line an 8 inch spring form round tin or square tin with grease proof paper.

Melt the coconut oil in a bowl over a pan of simmering water. Mix the coconut flour and cacao. Blend with the bananas, honey and coconut oil. Add the eggs and blend until well mixed. Stir in the chocolate chips/bits.  Pour into the the and place in the centre of the oven. Bake for 45 minutes for a gooey centre, 55 minutes for a set centre.

Serve with fresh berries or simple on its own! YUM!
