Refreshing and Nourishing Melon Mousse

This is a rather good post-workout treat thanks to the high levels of water, antioxidants and healthy oils. It's also high in fibre thanks to the chia seeds. Saying that, it's also a totally fabulous summer treat for anyone!

Melons are a great source of potassium needed for skin plumpness and good water balance in the body. The are high in antioxidants, particularly vitamin C, need for the immune system and to fight off free radicals created by exercise, stress and toxins in our environment. Cantaloupe melon is particularly high in vitamin A, another brilliant antioxidant needed for healthy skin, teeth, bones and vital for the immune system.




  • 1 ripe melon of your choice (I haven't tried this with watermelon, but all others will definitely work) 
  • 2 ripe avocados 
  • 4 tablespoons of chia seeds, soaked in water for 30 mins (if you don't have a powerful blender) 
  • 2 tbsp coconut oil (optional) 
  • 2 tbsp lecithin (optional) 
  • mint leaves to serve

Optional toppings:

  • fresh fruit/berries

  • cacao nibs, goji berries, pumpkin seeds, etc


Scoop out the melon and the avocado and blend together until smooth. Add the chia seeds/psyllium husks, coconut oil and lecithin. Blend until smooth and thick. 
Pour into ramekins or serving glasses, top with your preferred topping and leave to cool for at least 30 minutes in the fridge.

WARNING: You'll most probably end up licking the bowl! Make sure no one is looking!



If you don't have chia seeds, use psyllium husks or ground flax/linseed. This will help to set the mousse otherwise you'll just have a very delicious smoothie!
